Lilly Pilly Jelly/Jam

Hi Friends,
This week I found time to make lilly pilly jelly. Gosh I am so pleased with these two batches of the jelly. My mother looked at it and said she had never seen such a clear jelly in all her years. Meanwhile I am pleased because it is a beautiful rose or maybe a claret colour and you can see right through it. Had a little bit of an upset last night as one of the tops came off during the water bath. I took this jar out of the water and poured what I thought was the amount of water that had seeped in to the jar out then put the lid back on it thinking this jar will be destined for us. On checking the jars this morning they have all set up lovely and sealed even the jar that collected a little more water.
Will be interesting to see what that jar come out like when it is opened.

At the moment I have some strawberries which I have roughly chopped and then crushed a little, macerating in some sugar and lemon juice. Plan to make crushed strawberry jam today.

Dried apricots were on special last week so I made apricot jam/preserve which is also looking quiet cook. Can you tell I have a sudden urge to preserve? :lol:

You sure have :lol: :lol:

I bought a jar of Rosella Jam the other week as I've never tasted it, but still haven't cracked the lid. I don't know why I do this, I end up with jam years old in the pantry... I'm too much a vegemiter me think. ;)

The jelly and jam all sound lovely though Kathleen, and it makes me want to try some... but what a waste I am. :lol:
