useful tomato sauce

I use this tomato sauce for lots of things. Over pasta, add some mozzeralla cheese and bechamel sauce and make a pasta bake. Use it for the base of Osso Bucco or other meat stew dishes. Put it throught the blender and it makes a great sauce for kebabs. You could add zuccini or other veg.

I make it in big batches and freeze it for later. No exact measurements are needed.

A couple of carrots chopped
An onion chopped
Part of a capsicum chopped
A bottle of tomato puree
a bit of tomato paste
a little dark brown sugar
some Worchestershire sauce

Put the veg and garlic in a pot and saute for a couple of minutes, add the tomato puree and paste, simmer until the veg are nearly cooked then add sugar and Worchestershire to taste and cook a bit longer, then use it how you like.

I have just had a thought (frightning! :o ) could you bottle this?

You could bottle it but I'd can it rather than water bath with the veges, and no vinegar, so it would be low acid.
