Beetroot and Ginger Relish

Beetroot and Ginger Relish.

500 grms fresh beetroot-peeled and finely chopped.(This last time I shredded it in the food processor and it worked great.)
1kg of cooking apples, peeled ,cored and roughly chopped.
280 grms red onion finely chopped.1 X 2.5 cm piece of fresh ginger,grated or finely chopped.
75 grms of crystalised ginger finely chopped.
350 grms soft brown sugar
2 teaspoons salt
1 teaspoon all spice
750 mls red wine vinegar.
Boil altogether for approx an hour or so until right consistency.
Bottle and seal - then water bath for 15 minutes.

Makes about 6-8 jars.
I double the recipe and get 18 half pints approx.

Hi, reading this post I forgot that I had made this about this middle of last year so have just broken open one of the jars. Yum! :D
