Pasta Sauce recipe wanted

Hi Everyone,

Seems to be the year of the tomato for me and I will soon be deluged.

I searched around on here and found a lovely tomato sauce recipe and will give that a go but would also like to try my hand at making Past Sauce.
Does anyone have a tried and true recipe they could share .

I know the one I used I think came from Kathleen??

I'll hunt it out and see, and if so post it to recipes.

We had the year of the tomato last year- this year is abysmal with only cherry toms- but bless them.(Roasted them in the oven with garlic and drizzle olive oil they make a lovely pasta sauce).


But for big tomatoes I use:-


Mine pasta sauce comes in two parts
Tomato Puree
5Kg tomatoes quartered
2-4 onions
2tsp dry basil or fresh amount equivalent
2 tsp dry marjoram or ""
2 tsp Celery seed (optional)
1 TBS salt
2 TBS sugar
1 tsp pepper

Boil altogether till half volume, blend with whizz stick bring back to boil & bottle.

Or for Pasta sauce do above with tomatoes only and boil down to half volume. Then for every 2 cups of that cut following in small cubes
1 med onion
1 red capsicum
1 green capsicum
Saute in 2 TSP oil-(Not butter) without browning until onion is transparent
Add 2 cups puree
1/2 teaspoon of each dry basil, oregano and mustard seed
1/2 tsp celery seed
Cook over mod heat 5-10 mins until thick enough to spread on pizza
Add salt to taste
boil and bottle.

Thanyou so much Glyn.... thats great.

I like the idea of the stick mixer. Otherwise its blanch and peel 20 kgs of tomatoes.. groan. :? Not my favourite job...

I also have loads of capsicum too...so that will be handy. And of course I want something I can bottle. I read somewhere not to use oils if you are going to bottle as they can go off and cause nasties in the food.

Interesting how the vegies have their good and bad years, isnt it. Last year I had enough cucumbers to supply half of Donnybrook.... :lol:
This year its the tomatoes. I love the Mighty Reds, best tommies ever but hard to find so I will be keeping seeds this year.

Thanks too Vicki...I always like to try a few ideas.

So good you could post this... I'll try it too when I get some tomatoes.

I've had family visiting and with the heat and things, just haven't had time to look yet.

Di I have the cucumbers this year! Just 4 plants (lebanese) and cukes galore. I've been enjoying them just chopped with balsamic, verjuice and cracked pepper for lunch.
Tomatoes went in late, hopefully they do OK.

Hi Jo,

So the cucmber explosion has moved up the valley this year.... :D I'm not surprised, you have great soil up there. I think I would rather have lots of tomatoes as I am the only one who eats cucumber here. But its lovely to give visitors and armload of fresh veggies when they come isnt it..

By the way, if you want some great fruit go and see George Park.. His place is the town side of the big rail crossing on SW H'way, about 5 ks north of town. He has a sign out "Parkeys" His peaches are to die for and his satsuma plams are just ready now. He is about 80 and just a lovely man. He is a friend of my 88 year old uncle. My last lot of peaches never made it into bottles.... sliced on cereal in the morning and on icecream at night... oh yum.
I am going today to get some more and hope that these make it into the bottles... :lol:

I dont suppose you know anyone with some bottling jars do you... I'm almost out this year.. I have scrounged all the secondhand stores but round this place its hard to find any... well empty ones that is... :P

Di I have heaps of jars unfortunately these jars and I are joined at the hip even if I can't use them at the moment :lol:
With our fruit trees being so young still the thought of those plums and peaches sounds just tantalizing and makes me wish I lived closer so I could pop on over to get some.

Oh well can't have everything can we? :P

Thanks anyway Kathleen... I know what you mean about being joined at the hip. :lol: A lot of mine got broken in the move here 6 years ago and I was so cross... of all the boxes to get dropped. I guess thats what happens when you get the Dodgey Brothers as house movers. :(

Maybe keep an eye out in your local rag or while in town on the notice board. I would be happy to send you some money for them and maybe you could call in for a cuppa next time you come by.

By the way Thanks for all the sauce recipes... I am HOOKED !!! I made some tomato sauce and pasta sauce.... and they were absolutley gorgeous. I never realised how easy they were to do and how wonderful they taste. Mere Male has been slathering it on everything.. :lol:
I picked another bucket full of Romas today and am having a go at some tomato relish....

I will have to move fast as with out of season rain and humidity I now have those green tomato bugs.... :shock: I pulled out the affected bushes and carefully put them in a chaff bag, then sprayed some natural spray on nearby bushes. They were falling off everywhere and I stomped on all that I could see... Anyone got any ideas for controlling these horrid little creatures. They totally ruin the fruit and I am afraid they will spread to everything else.

Green tomato bugs? Uh Oh, I am due home tomorrow after being away nearly 2 weeks, hope mine are still OK. Only have four different plants ripening now, I put some romas in very late, hoping the get productive before it cools off.

Yeah I am the only one who eats the cukes too! Ecept I sneak them into stir fries and in to Thai green curry at the last minute so the other half eats them then. The soil they are in was literally pure sand, I added one bag of sheep manure to the bed and some dynamic lifter when we dug out the bamboo, and that seems to be keeping everything very happy.

Thanks for the tip about Parkeys, I've seen the sign but never stopped in. Will just have to do so now, especially for the satsumas! I am big on the all yellow - including the skin - peaches that I find at some places down there, not sure what the variety is but they are so good, and a later season variety too.

No, sorry, I am not much help on the jars. I get mine from Plasdene in Canning Vale - just regular kind of jars not mason jars or anything fancy. Pretty good value and a huge range, also replacement lids as well. Min purchase there is $50, which is pretty easy to do ;)

I'm coming in a bit late but this is my very best pasta sauce recipe .

It's a bit different with the pork and cream ,and we don't use it all the time ,but if we make lasagne to take some where this is the base sauce .Or if we're just feeling like a rich food hit ! Try this with silky smooth homemade pasta and another bottle of red . I altered this from an Italian recipe in a book I read sometime ago but now claim it as my own

PORK RAGU

2 carrot diced
2 onions diced
2 sticks celery diced
3 garlic cloves sliced
1 tbsp each chopped sage ,thyme and rosemary
2 kgs finely diced or minced pork neck
1 bottle good red
1 litre water
1 litre passata---hopefuly your own homemade
425g jar tomato paste
1 cup cream

Sweat off the veg with the garlic ,chopped fresh rosemary and sage leaves ,using extra virgin olive oil .
When softened and golden , add the 2 kgs of finely chopped pork neck and brown that as well .When well browned , add the bottle of red wine , the 425g jar of tomato paste ,the litre of passata and water .Bring to the boil and reduce heat to a slow simmer .Add a cup of cream ,stir in well and cook for 90 mins at least ,checking the pot every now and then .Check the seasonings when finished and adjust if you feel it necessary .This will freeze well too .
