Catherine and I did fruit platters for a staff function at her school the other day and I was amazed at the amount of watermelon rind left behind .We must put more weight in the compost than our stomachs when we eat watermelon !
And I 've read recipes for watermelon rind pickle ,mainly American , but never made it myself .And given the amount of watermelon I've planted this year ,I need a recipe .Anyone here ever made rind pickle ?? Got a recipe hiding in a recipe book ?? Anyone got grandparents growing melons in the Louisianna Bayou,listening to Credence Clearwater Revival ??
